While not specifically VoIP related, I have found these sites to be of use when doing phone wiring work.

Wiring Guides:

Doing your own telephone wiring is a site created by Sean Crist. It has some excellent graphics and clear descriptions of color coding.


Cat 5 COLOR Code Standards is brought to us by Blue Max Technology, "The Connectivity Experts". This site is a good resource for those wanting to use Cat 5 for both phone and Ethernet, even simultaneously.


Supplies:

When doing wiring work, either adding new jacks or expanding existing jacks, I find Leviton's QuickPort products easy to use. Most products include a simple punch down tool and good instructions. The products are clearly labelled. All of this makes it easier for the beginner to tackle his or her first wiring product. Another thing I like about the QuickPort solution is that products are easy to find because they are sold at Home Depot

Either on-line vendor or national retail chain would be helpful. Thanks.

The easy answer is to try Digi-Key a well known and reputable online retailer.

The better answer would be to refer you to froogle Google's product search engine. This is a good resource when attempting to locate any type of product and assists you in getting a fair price.
