The PC and Vonage router just need to be on the same network (ie) 192.168.15.x.

Then open Cain and see picture below.

I can't figure out how to get Cain to work. I tried following the steps in your image but when I get to step three the plus sign is greyed out. I have my cable modem going into a WiFI router and in one port I have my PC and in another port I have my Motorola Vonage box (not in a closed loop though). When I go to host and click on the plus sign, I see my WiFI router and the Vonage box but I can't sniff VOIP data. The sniffer is working since I can see http passwords. I've truned of ZoneLabs and disabled Windows Firewall but nothing is working. I've also tried taking the WIFI router out and just having cable to Vonage to PC and that doesn't work either. What am I doing wrong?

To record phone calls, I just use a telephone hybrid. Definitely not the cheapest way to do it, but it will have the best sound quality, and I already had 3 of them here. It's also very simple compared to IP-based approaches.

You should check out Express Talk VoIP Softphone.

It allows you to record phonecalls no matter who your SIP provider is
