Some phones don't allow for this. My GE two set forces you to transfer a call from one set to another. Ergo you can't use both of them at the same time.

Pull up a user manual and search for Conference under Telephone Operation.
The Panasonic phones can conference in up to 2 handsets as well. I have looked at some of these models because they also offer call blocking of numbers you don't want calling you and talking caller ID.

The Uniden phones I looked at also say they can conference in up to 2 handsets with an external caller.

So you will have to shop around and read through the user manuals to find the features you really want.
Two phones would be sufficient. I have two daughters, so you can guess what I need this feature for. The Panasonic phones seem to get decent reviews and I will be going out to do some shopping later on today. I have spent quite a bit of time browsing the forum just seeing what I can do with my new service. Needless to say, there is a wealth of information here. I look forward to learning a ton about
