What is the correct order to convert my old phone number and cancel my phone service with my phone company?
When I am all done I want to cancel my service with my phone company and keep my old phone #. I currently have traditional phone and vonage(Two phone bills). I have disconnected the wires to the house from the telco so I can use the hard wired phones. I have forwarded my phone to my Vonage number (*72).

If you're ready to give up your land line, do the transfer first. If you cancel, you'll probably lose the number. After the transfer is completed, your account with the old phone company will probably be cancelled automatically, but if it isn't you can do it then.

Do I need to do something else to be able to see the "Keeping Your Phone Number" button

"Please log into your web account and click on the link for "Keeping Your Phone Number Status History". Here you will be able to complete the Letter of Agency required to transfer your number."

After I logged into my web acct I did not see the link for 'Keeping Your Phone Number Status History' I did see "Service Announcement" "Voicemail" "Call Forwarding" and "Refer a Friend Program"

Since you already have a Vonage account, I think you will need to call Vonage to get the transfer started. I believe the only way to start the transfer to an existing account without calling is to add an additional line then cancel your current line when the transfer completes (which would require you to call anyway.) I could be wrong here, but I don't think there is any other way.

No, this is easy to do and thankfully doesn't require calling customer service.

From the "Billing" menu (no idea why it's there), select "Change your phone number" over on the right side of the page, then choose "keep my existing number" on the next page.

This starts the number portability process to transfer your landline number to your Vonage account. There's a legal form that you complete online called a "Letter of Agency" (I think - Vonage refers to it mostly as an LOA) that authorizes Vonage to make everything happen INCLUDING canceling your landline service as part of the process.

Since you're changing your Vonage number as part of the process there is a $10 fee. You can avoid this fee if you make the request when you first start up, but I think that's a little risky (you really want to make sure you have reliable Voip before you tell Ma Bell where to go).

The net effect during the transfer is as you describe - your "official" Vonage number changes to your landline number immediately, and your previous Vonage number becomes a "Virtual Number" that can still receive calls. You have the option to retain the virtual number (for an additional monthly fee) or have it automatically cancel once the number port is complete.

DO NOT cancel your landline service directly. The process will take care of this automatically. You WILL lose your current landline number if you cancel your landline service before the number is transfered.
