1) each router does a network-address translation, which is always slow. When you are behind one router, you add 10-20ms to your ping time. Behind two - things get ugly: your network might work (see point 2), but it will be more latent. You might notice delays when you speak on the phone and your pages won't load as fast. Your service will still be as fast, but it will be slower to respond.
2) most routers like to give out addresses from 192.168.1.0/24. When you have two routers daisy-chained, the second router will see a 192.168.1 address on both of its interfaces. You might end up with routing problems.
As for your problem, I have a simiar one: I run servers and having a Voip adapter or a router before my computer is totally unacceptable. What I am planning to do is have a dedicated computer for a router with a wireless card to act as an access point.
