Yes, you can do it that way. Of course, the Vonage adapter uses the line 1 terminals in the RJ11, so you would have to modify a patch cord so that it connects to line 2 instead, or, as I think you have in mind, change the wiring of the wall jack so that the orange/orange-white pair hooks to where the blue/blue-white normally hooks.
Another easy way to do it is to get an L1/L2 splitter. This is not a simple Y-splitter that converts one RJ11 into two identical RJ11s. This is a splitter that plugs into an RJ11 wall jack and connects line 1 from the wall jack to the line 1 terminals on one output jack. It connects line 2 from the wall jack to line 1 on a second output jack. Using one of these, you can plug the adapter into the wall and the Vonage box into the L2 jack on the adapter. Then use a similar adapter in each room where you want to use the Vonage line.
Any way you do it, you'll want to make sure that all the orange/orange-white pairs for the different rooms are connected together at the punch down.
