It's hard to tell about your box from the pictures, but the plug deal generally works like this. The phone company "owns" one side of the box, which can't be opened easily without a special tool. The landline comes in on that side and is wired "behind the scenes" to a jack on your side. The plug plugs into that jack and is connected to your house wiring. To disconnect your house from the phone company you just pull the plug. For you or the phone company to test their line, just pull the plug and plug a regular phone into the jack. Very convenient. If that swing-back gizmo in your box has contacts in it, and if that hole that it seems to swing into has contacts, then you can bet that's what's happening.

Getting back to your problem, I assume that all your jacks were working properly before you dumped the POTS service. Is that correct? If you're not sure (and maybe even if you are), it's time to open those three boxes and do a careful visual inspection. Are all the jacks wired the same? Are the wire colors the same? Do the same colors go to the same contacts?

Assuming the wiring is the same and it worked before, the problem almost has to be something that you inadvertently did when you were handling the wiring. Sometimes jacks are "daisy chained" from one jack to another, but often individual wires are run to each jack and brought together in a box. Sometimes that's a separate box and sometimes it's the phone company's box. In the latter case, all of the like colored wires from the different jacks in your house need to be connected together and also connect to the appropriate phone company wires (sometimes through that plug). In disconnecting the house wires from the phone company's wires, it's easy to disconnect them from each other. That would give the symptoms you're seeing, so it's worth a close look.
