If you have clear line of sight from one house to the other, maybe, just maybe, you could put a directional antenna on a 2.4 GHz cordless phone base station, and get a signal all the way to your uncle's house. Any standard WiFi "signal booster" antenna should be compatible with 2.4GHz cordless phones, since they use the same frequencies.
You'd need one of the cordless phones that has the base station and charger separate, so he can have a dedicated base station at your house with a directional antenna pointed at his house, and still charge the phone over at his house. You want a directional antenna to increase range, and to keep anyone else from intercepting the signal. Get and test a few cordless phones in the 900Mhz, 2.4GHz, and 5.8GHz ranges. You never know, you might just find one that works, as long as you can figure out a way to charge the remote unit.
300 feet is a little long for a conventional telephone cable, but you might be able to use good quality Cat 5 shielded cable with RJ11 connectors on each end to make a connection between your houses, if you can do a cable run. No guarantees on that one, but you may be able to get a good signal across that way. Maybe. That would allow both sides to use wired or local cordless phones, but you'll have to figure out how to string the wires between the houses. I wouldn't bridge BOTH sets of household wires if you can help it - that's just asking for trouble as in really, really bad attenuation and possibly a burned out adapter, but it would be the most convenient to set up if you have RJ45 jacks outside at both houses.
